Can a visa or MasterCard gift card be used to maintain my iTunes account instead of a personal credit card issued with my name on it, and with it having available credit, current on exp. date..etc?

Prepaid cards are unlikely to work with iTunes, part of the store validation is that the card is registered to the same name and address as on the iTunes account, and was issued by a bank in your country - you can try adding it, but you are likely to get a 'declined' message
