The complications tab My Watch Series 2 shows only 2 available apps and only 2 apps in the list "do not include". How do I add to the list of "do not include"? BTW, in the Dock tab all apps are shown.

The Complications page in the Watch app only provides the option to include or exclude complications from third-party apps.
Where built-in apps offer complications for any given location on a watch face, these are automatically included within the options that are shown when customising that complication on that watch face.
The following page from the User Guide lists the complications for built-in apps that are available for each watch face:

The Complications setting page in the Watch app automatically lists all installed apps that offer complications. It is not possible to add apps to the page manually.
Some Apple Watch apps do not offer complications, so will not be listed there.
To move listed apps to / from Do Not Include, tap Edit (upper-right).
Thanks Jonathan, your answer makes sense to me. However, I have many apps that I can access when I am editing watch faces. I would have thought if I can use the apps this way then the apps should "offer complications" for the Complications setting page as you suggest. How do I check whether an app "offers complications"?
