How do I recover my applePay PIN number

There is no "Apple Pay PIN number".

If you have forgotten the PIN for a payment card that you have added to Apple Pay, contact your card issuer to request a PIN reminder.

If you are trying to add a payment card to Apple Pay, the security code that needs to be entered is the last three digits on the signature strip on the back of your payment card (or the four digits on the front, for American Express cards), not your iPhone passcode:
