After selecting Safari Technology Preview as default browser it now also launches macOS's default version of Safari at the same time on launch. Have tried disabling extensions but same result.
Is there a way to prevent this?
System Preferences > General > Default Browser:
Click inside the box and select Safari as the default browser.
If this doesn't help, ( Finder > Applications )move SafariTechnology Preview to trash and empty the trash.
Select Safari as the default browser.
Download and reinstall Safari Technology Preview, but don't choose it as the default browser.

Did you ever figure this out? The only reply so far is irrelevant. I have the same experience as you.
Does System Preferences/General show the default as the preview or does it just show Safari?
Default is set to Preview. On another Mac this does not occur. This happens even in Safe Mode.
That did not change the behavior. I will create a new user on this machine and see if it persists there.
[edit] That did not help either, it persists with the new user account.
