I haven’t found a way to delete alternative routes from Maps. I don’t mind them showing initially, but I want to get rid of them when it is time to print out a set of directions.
On Google maps, you can grab the alternative route and pull it over to the main route and it disappears. Haven’t found any way to get rid of it in Apple Maps.

Yes, it will only print the selected route.
However, sometimes I do a screen capture of just the map itself and print that. I also frequently study the map on my screen since it is much bigger than the printed paper version and easier to see. I may not even print it.
It is annoying that I can’t get rid of alternative routes on the screen.
You can let Apple know you are annoyed here…
You click on the route you prefer and it will print that route.
