When I am in the process of creating a Calendar event, at first the label is a nice, bright color. But after I finish and click Enter or Apply, suddenly the label becomes much lighter, basically pastel. How can I retain the more vivid color?

You can't. You can change a calendar color but the switch to pastel is Apple's design implementation. Calendar (Yosemite): Rename a calendar or change its color
