I airdropped recently with someone and im concerned if they can see my photos

Using AirDrop, only the file that is actually air-dropped is visible, it does not allow access to other content on either of the devices.

Did you send them your photos via AirDrop? If not, then they can't see them.

You are perfectly safe. Airdrop is strictly a "one thing at a time" feature, your friend does not remain connected to you.
