New Stock function not reporting all data
macOS Sierra (10.12.1)
It's not sure for me. Even on the same exchange, some have all and others missing some in my quick check.
I found a clue on a page at Yahoo! Finance ( the data provider for Numbers )

"Quotes are updated automatically, but will be turned off after 25 minutes of inactivity."
Does this ( or other part of the document ) make sense for you?
I've got a similar but different issue. Currencies and foreign shares seem to come and go. Last night it knew the euro dollar exchange rate, this morning it reports "No information about the specified currency pair.". This morning it knew the price for Santander on the Madrid exchange, SAN.MC; this afternoon it reports "There is no security named "SAN.MC"". Going direct to Yahoo still gives quotes for both. So I'm guessing this issue is in the interface rather than the source.
I do hope this gets fixed, as it's a lovely feature -- apart from the not working reliably bit.
I think it's based on which exchange the stock is listed on.
The auto turn off is for the browser. The browser window will update while you watch it if the price changes. They turn it off if there is no browser activity for 25 minutes.
