There is very little difference. In fact, one of the installment options Apple offers is actually through the carrier.

See these two screen shots ... it wouldn't all fit on one screen.

You can get to see these yourself online by selecting an iPhone and a carrier and choosing "Compare Payment Options" when asked "How would you like to pay?"

An installment plan is usually from your carrier. For example you pay $21 a month for 24 months. Or until you fully pay your iPhone off.
