Will signing into someone else's apple ID with all sync features give them access to my personal information?

iPhone 6, iOS 10.3.1

I used someone else's apple ID to download a paid game onto my iphone 6, when I was adding their account I made sure that their data is not merged onto my iphone, I turned OFF all the following features on that apple id to sync:

Photos

Mail

Contacts

Calendars

Reminders

Notes

Safari

Wallet

Game Centre

Keychain (Off)

Find my iPhone (Off)

iCloud Backup (Off)

and I even turned off iCloud Drive on that apple id too.

After downloading the paid app from that apple id, I immedietly removed all that apple id's data from my iPhone 6 and signed back in with my own apple id. But my device has been listed on the other person's apple id which I'm getting a little worried about.

If i disabled all those syncing features and removed everything from that account off my phone, will that person still have access to my contacts, photos etc. and will he be able to see everything from my phone?
