I use a 170F dry heat Sauna for 30 minutes four times per week. I have been watching movies in the sauna on my iPhone 7 plus. The device is not indicating any overheat message, and has been operating normally. Am I risking damage to the device?

I would not take iPhone in sauna or bathroom it not worth the risk
Unless you have plenty of money and can just buy another iPhone.

That exceeds the operating environment specs for an iPhone, so yes, you may end up damaging it doing that. I know I wouldn't, not with an expensive piece of electronics that I rely on every single day.
