Do you mean that you are all using the same iTunes account, or that you have your own iTunes accounts and are using Family Sharing ?

Can we still use her shared plan but make purchases for apps and such thru our own appleid and credit card on file for such account and if so how do we set this up?

What is 'her shared plan' ?

With family sharing you cannot use your own credit card, if you have a balance on your own account that will be used for your purchases, otherwise the organiser's card will be used.
