No version of Pages, by any stretch of imagination, is a Word clone, or has Word's field codes. If you want Word features, then just use Word, and you won't lose productivity looking for Word features in Pages.

Would you instead like an answer that makes you feel good, ignoring reality?
Pages 6.1 is by no stretch of the imagination equal to Pages '09, let alone MsWord. It is what it is, thanks be to Apple.

Pages has the ability to insert only those items listed in the Insert menu (and presented in black, not grey, in the environment currently active).
You can add section names to page headers (or footers) using Copy/Paste or Copy/Edit>Paste and Match Style (which would change the size and colour of your example "Introduction" to match the style used in the page header).
Date/Time of last save would need to be entered 'manually,' using the Insert > Date and Time item in the Insert menu. This initially inserts only the Date, with time set to 00:00:00 and not displayed. See the Help files for direction rgrding including the Time part set to the current time of day.
