I looked forever in the system and the user manuals to figure this one out with no luck. Is there a way to make the text appear vertically like below:

I know there must be a setting for this but couldn't find it anywhere in the parameters. Thanks so much.

Vertical text is an option that can be turned on in Motion (quite easily).
Here's a rather basic title in Vertical Text format:

If you need to spread out the characters use Tracking, not Line Spacing. If you have a "multi-line" text, Line Spacing will spread out the vertical lines. I defaulted this to All Caps but that can be turned off. I published Position and Rotation for convenience and if you'd like to keyframe some kind of animation.

Yes, and it should not even be necessary to quit and restart FCP X.
If you have trouble finding it among so many titles, you can use the search box:
If you have Motion, you can easily make a vertical title yourself.
All you have to do is take a title - say, Basic Title - open (a copy) in Motion, select the text layer, go to the Inspector, and under Layout, change Direction to Vertical:
Tinker with Alignment and enter each letter as new line:

I actually followed these instructions to the T and it really didn't do anything. There's nothing in the "Media" folder and the one file I have is "Vertical Text.moti" so I'm not sure what I'm doing wrong. I have it placed in the "Titles" folder since I figured it's related to the titles.
From your screenshot, I gather that you are still using FCP X version 10.2.3 or earlier.
That may be the problem, it is likely that Fox created the title with the current Motion 5.3.1 and that may fail to work in older versions of FCP X.
Yeah, I don't have Motion whatsoever, so in the end I'll just write each letter below each one to create the same effect. I would have to buy Motion which again, I don't have funds for.

I worked a little cheat on the file and attempted a back date... let me know if it works!
Also - make very sure you have the category step of the installation done correctly and that you're installing the complete Vertical Text folder *as* the template (not just the .moti file -- and yes, the Media folder IS necessary even if it is empty!)

You should take the *whole folder* and put it inside a category in the Titles folder, so that the path to it is something like this:
