When you went to find my iPhone were you able to see where the phone was? The phone needs to have a connection to data in order for that to happen and for the erase to go through. If there is no data as it is turned off, or not connected to data or wifi then it will not happen till the phone connects again.

Check if you are connected to a network, If yes, Go Offline, And come back online. Then Try Again.. It normally takes less than 5 minutes.

And I have Wi-Fi I just don't want to cancel and try again if this is really how long it takes
