After months of not using my Apple Watch, I tried resetting and repairing my phone to my watch. After initial scanning of that spinning cloud image, my phone says "Update Your Apple Watch," but then it says "watchOS 2.0.1 Your software is up to date." and nothing happens past that. Any advice?

BTW, what version of iOS are you using on your iPhone? It sounds like that might be an old version.

First update your iPhone to the latest version of iOS (start by making a backup):
Update the iOS software on your iPhone, iPad, or iPod touch - Apple Support
Then pair your Apple Watch by following the remaining instructions here (watchOS will be updated as part of the process):
