How do I make greeting cards in Pages

Launch Pages, click on "new document" and scroll down or click "cards' in the Sidebar. There are several greeting card choices.

I wanted to create a card from a blank template with photos from the internet and to write my own text without paying for the privilege; in short, what I used to do as a music teacher for concert programs. Happily, Pages allows for enough rotating and mirroring of the text so that a card or a printed program is still possible, though it's more difficult than before.

You can't have looked very far, nor tried anything if you can not do any of the above.

I used to make cards/programs for school concerts and musicals. I was able to use blank pages, add photos, text, whatever I wanted. What has happened to that capability in this new Pages? I'm very disappointed in this limited formatting.
