So I have restarted my computer and after gathering new files I want to back up them. Do you think that this back up will overwrite and delete the previous one I did before before I cleaned my computer?

Depends on what backup software you are using. if you are using Time Machine, then the previous backup will not be overwritten. Other backup utilities will overwrite an old backup unless the user changes settings in the software.
