In the finder when we hit 'CMD + SHIFT + G', we get the 'Go to the folder:' window, but we can't paste using CMD + V, but we can 'right click' and select 'paste' and this method works... Why ?

Yes I have no problem for pasting using CMD + V in a terminal or anywhere else, I just can't paste something using CMD + V in the 'Go to folder' input.
Ok, so to test it, you have to use a software like pages or whatever you want, then open a finder window using your software (like open a document with CMD + O) and in this case, when the finder open and you hit CMD + SHIFT + G, try to use CMD + V, it doesn't work in this particular case
What happens when you key something into the Go To Folder textbook, highlight it all, CMD+X to cut then CMD+V to paste?
So, key in ~/Documents, highlight it, press CMD+X to cut it, then CMD+V to paste it. What happens?
Ok then you'll have to work with the vendor of that app to fix their issue. This isn't an macOS issue.

Ok my bad, it just doesn't work in a particular software: IntelliJ IDEA from Jetbrains.
