I was able to do this by downloading the free iOS app Font Manager. This app lets you view all the installed fonts on your iOS device, and it also lets you install new fonts that will be available in apps such as Pages. To do so, find your desired font online (e.g., I found Adobe Garamond Pro on fontsgeek.com) and download the zip file. iOS will ask you what you want to do with it — select Send to Font Manager. It will then show up in the list of installable fonts in Font Manager, and you can then tap to install it.

Extensis has an app to let you do just that. I believe you have to first purchase Suitcase Fusion for your Mac before you can use it.

I almost forgot about it. 🙂 Saw the offer for the freebie app after purchasing SF7, but really had no need to install it on my iPad or iPhone.
You cannot add additional fonts to Pages for iOS. If you have a Mac you can change the font once you have transferred the document.

Didn't have access to my iPad earlier to check. It appears you can simply download Suitcase for iOS without purchasing Suitcase Fusion. It's there in the App Store for anyone.
