I want to activate the voicemail in my iphone 5 but i don't see an option in the Settings. I want to set it up in case I get a call and I'm not able to answer it right away, at least the caller can leave a message. Also, when I click the Phone icon, then choose voicemail, the Voicemail option is not clickable. It seems to be greyed out. 😕

That is a carrier feature, so contact your phone carrier.
