My iPhone was stolen what's it's fate? is my information safe?

So I went to Coachella this year and on the very last day on the very last night my boyfriend dropped my phone during one of the sets and then we walked out just to realize seconds later that he didn't have my phone on him so long sorry short this person used Siri to ask who i was it showed my picture and my phone number looked up my phone number on Facebook and my business page popped up not my personal one and w verification codes shown in the screen they reset the password to that FB page and the email attached to that FB page in hopes of getting my Apple ID if they would've gotten into the recovery email of that email to the FB page they would've gotten my Apple ID luckily they didn't but by the time morning came I finally found out how to use Find my iPhone on my MAC that I luckily brought w me to our hotel and I turned on every mode on find my iPhone On lost mode the sound the message deactivated all Apple Pay cards I got a new phone a day later after that to Tuesday April 25th and then the man told me at the atnt store to activate the new phone and ask atnt to black list the other phone using the IMEI number I do all that call atnt just for them to tell me that the stolen phone has to be active (is that true?) so my

And changed my Apple ID I have double authentication now and when it was stolen etc they only got as invasive as my FB businesspage and my buissness email and on top of that they had the audacity to fake some Apple support to try and get me to reply and give them my info and go to a website of some sort. With that being said is my Info safe? will they see my personal stuff on my phone? Can they clear the phone without having my info? They screwed up and used someone else's name instead of mine w the first text prob another of their victims they spelled acesss wrong and I have never ever in my 7 years of apple use have never used photo stream EVER ....

Note: I don't have service cause we changed carriers that day and this was sent to my new phone not the stolen one obviously lol
