Bold typing when "Bold text" is selected

That's the way that it works if you use Bold text in Accessibility.

I prefer just viewing text in bold not typing in bold format.

Why don't you turn off the Accessibility option for bold text then type notes in normal weight type and then select all of the type when you are done and use the options bar or make the text bold. This way you are trying in normal but creating bold text for reading.
