What happens if I use a fake primary address to maintain security?

To access the US store, you have to be physically located in the US, you have to have a US credit card, and have a verified US billing address for that card.

Nothing. You cannot change stores, and even if you were to somehow able to get to the US store, you couldn't use it because you could not provide the information I mentioned before. Changing stores requires a credit card, and the billing address has to be verified through the credit card company. It isn't going to work. Unless you are in the US, you do not have the rights to access the US store. Content there is based on copyright, and the rights holders determine where things are available. And they determine that you cannot have access to what it is that you like from where you are, so that is why you cannot find the content in the Hong Kong.

If it's also your main email address, they may have your Apple ID that way.

Having your Apple ID gives them no access to your personal data. With Apple's 2 Factor Authentication, even having your password is not enough to compromise your account.
