How to undo a delete on my Notes!! I lost everything!!

Check the Notes app and it should show a Recently Deleted folder. You should be able to go there and recover the note. If not, then if you have a backup of the device while the note was still on the phone, restore to that backup. Realize that anything that you have done since that backup would be lost.
