iPhone 7 stuck in "Restore in Progress" in iTunes with 56 hours remaining

- Got the phone today. Upgraded from 32GB 5S. New phone was restored from a week-old iCloud backup in-store. I wanted to restore it with a more recent iTunes backup once I got home. I updated the iOS then told it to restore 4 hours ago. The progress bar hasn't moved. The hours remaining keep increasing, now at 58. This is my business & personal phone. I need it for work in 8 hours.
- Have tried quitting iTunes with no luck. Have searched for solutions with little luck. Was considering hard resetting iPhone but not sure it's the right move. iTunes is up-to-date. However, I have not upgraded to Sierra on my Early 2011 Macbook Pro (Yosemite 10.10.5).
- UPDATE: iTunes stopped the restore on its own at 67 hours, saying it couldn't complete because the iPhone was disconnected. iPhone still stuck on "Restore in Progress" message even after I told iTunes to eject the phone. Finally, I just unplugged the phone, which restarted. It's functioning normally thus far, but I'm still missing messages, photos, etc. from the last week. How can I ensure the restore from my recent iTunes backup will work?
