I want to stop receiving email on my phone. How do I do it yet still be able to send a photo, etc to someones email? I have too much memory used up in emails I don't even look at.

There is no way to really do that. You can set the email account to manual fetch, but every time you launch mail to send something, it is also going to check for new mail. And you cannot install just the sending server settings alone, without setting up the full account.
In the last week I tried to send a lot of movies to my wife and my email that I could open, then save on my PC. After I thought I'd sent them, I deleted the movie from my Photo albums to save space. Now they're showing up in an "OUTBOX" in the mail section. Now I find that they're all just sitting in an out box on my phone. I thought when it said "use mail drop" that it had been sent, although they never showed up when on my PC in my email. I just want to delete all 600+ emails that are showing in my account on my phone. If I deleted them all on my iPhone, will they also be gone from my PC, when I open my OUTLOOK? It seems that all kinds of spam, etc is stored on my phone. If I delete the email account on my phone, will Apple still be able to use the info? I'm really confused now.
