How do I change the color on the face?

The Colour watch face (as shown, for example, in the Face Gallery tab in the Watch app) is one of a number of different styles of watch face:

Adding new watch faces (whether via the Face Gallery or directly on your Apple Watch) adds them to the collection on your Apple Watch. When the collection contains more than one watch face, swiping sideways from edge to edge across the screen when viewing the time switches between them.
Pressing firmly on any given watch face when viewing the time on your Apple Watch accesses the customisation options for that watch face. Customisation options vary by watch face (see the same link above). Swiping all the way to the left enables you to edit complications.

For example, for the Modular watch face, the left-most customisation screen enables you to change the colour by turning the Digital Crown. The right-most customisation screen enables you to select and customise complications.
My watch face is Modular, and the color is customizable on Modular. It always was green. It suddenly turned white. How do I change it back?
That's the page Ive been studying. Notice it says: "Swipe left or right to select a feature, then turn the Digital Crown to change it. For example, you might change the color of the second hand or the markings on the face." When I turn the crown it changes the complication, not the color. When I try to change it from the face of the watch, under color it shows an analog face. I clicked on the green, assuming those faces were just to show the color, but it changed my digital face - and all its complications - to the same analog face shown under "color."

I really appreciate your efforts, but I've read the manual. You are reinforcing my conclusion that the manual says nothing about how to change the color without changing the design. I've read all the pages you cite. If you think I'm missing something there that explains how to change the color and it really works, please cut and paste that portion, because I can't find it. The manual merely talks in vague terms about changing the color without explaining or picturing it. Are you in the UK? What time is it?

On your iPhone, in the Watch app, go to: My Watch (tab) > General > Accessibility - turn off Greyscale.
Thanks, Jonathan, but that didn't do it. It was off. I turned it on and off again, but no change.
That did it! Thanks, Jonathan. I appreciate your persistence. I had tried that but I was sure the instruction said swipe to the left and all I got was different faces.
