Apple Watch won't re-pair to iPhone

My Apple Watch disconnected from my iPhone 6, and I tried to reset Bluetooth settings, but that didn't work. So I tried to erase all settings on my to then reconnect from a backup or so, but now so am stuck. The problem comes when I log in with my Apple-ID, then it says my Apple Watch must be updated (see the pictures down below) Any idea what I can do?

Hi

First update your iPhone to the latest version of iOS (start by making a backup):

Update the iOS software on your iPhone, iPad, or iPod touch - Apple Support

Then re-pair your Apple Watch by following the remaining steps here - watchOS will be updated as part of the process:

Set up your Apple Watch - Apple Support
