Netflix uses a proprietary method of encrypting movies, you cant extract them as playable files later, the same can be said for Amazon. Amazon offers off line viewing of select tiles with select subscriptions but not for OS X at this time

Unfortunately neither Netflix nor Amazon provide apps for computers. You use their website to view the content.
If the website does not allow offline viewing there's not much you can do that would way not in some violate either provider's terms of usage of their content.
If you need to watch content offline, you'll need a mobile device like an iPad or iPhone to be able to download their content.
