How to Disable Safari Autocorrect When Greyed Out

I am having huge problems with Safaris Autocorrect feature. I write in two languages and often have to go back and change a number of words. Also "liked" is not "biker", "systems" is not "sisters" etc. Sometimes it does not change my words until I press send which makes for pretty awkward sentences.

I went to systems preferences > Spelling & Grammar>

Correct Spelling Automatically is greyed out! Please help, please.
