Why can't I airplay my iPad screen to my Mac?

I've been looking for ways to stream my iPad screen onto my Mac computer and in 2015 there's a YouTube video which shows a guy using third-party software (OBS) to airplay is iPad screen to his Mac screen and then stream his games… why today can I not airplay my iPad screen to my Mac?

iPad Air 2 WiFi, Cellular, iOS 10.3.2

As of El Capitán, it would appear that you cannot AirPlay an iDevice to your Mac any longer?

You can AirPlay your Mac to an Apple TV and AirPlay your iDevices to an AppleTV, but you can't AirPlay your iDevices to your Mac, natively?

Apple feels some older Macs aren't up to the challenge of being able to mirror iDevices on these computers.

These solutions work well enough, but they don't run perfect on older model Macs.

There is some slight delay in the mirroring, especially with streaming movie/video content from an iPad to the Mac, but I find it acceptable to be able to get this capability on my iOS devices and my older iMac.
