my HP 7640 series 2 is not printing in color

My HP 7640 series 2 is no longer printing in color. The "advanced" settings doesn't even show anything about color or not. I un-click "black and white" on the printer window and the preview shows in color, and then lo and behold the print comes out BLACK and WHITE, despite the fact that the preview is showing COLOR. Someone or somehow, my printer used to show "color" as an option and it now no longer shows this. It shows "default 1," "default 2", "default 1-1", etc, but then when you search to find out WHAT these defaults MEAN, you get no answers. The "Help" function -- as usual -- is totally WORTHLESS.

HOW do I get my printer -- which until a week or so ago printed exactly what the preview showed, whether color or black and white -- simply to obey the command to print in color?

There are NO clues to the answer to this question -- proving again that computer geeks who write software live with their heads in the "clouds", imagining that all us non-techie people somehow are just not intuitive or smart enough to "get it".
