Trying to use SIM card from my current carrier Sprint on an old phone I still have that was a 5s on the Verizon network.
How do I unlock the old Verizon phone so I can use my current Sprint SIM card?

The problem is not unlocking a Verizon phone, which is already unlocked, but getting Sprint to accept it. at one time they wouldn't; check with them, as their policy may have changed.

You pretty much must contact your carrier
You'll need to request Verizon customer support to unlock it for you. They might charge a fee of around $50 for this.
