how do I save documents to my computer?

I am used to saving documents and other things I create to physical computer; however, recently, by default, documents have just been saving to the iCloud (I think), and I don't see an option to save anywhere else. Please help. Is there a good article someone can recommend such as iCloud for Dummies or something?
