My power went out. Can I just switch to a backup battery and continue?

Be sure to keep your Apple Watch on the charger and connected to power when updating watchOS:


Update the software on your Apple Watch - Apple Support


If power has been lost during the update process and your Apple Watch is now displaying a red exclamation mark, then you will need to contact Apple Support, make a Genius Bar reservation or visit an Apple Authorised Service Provider to arrange for it to be serviced:
