Hi

When using the built-in Workout app to record outdoor running, walking and cycling workouts, Apple Watch Series 2 models can use built-in GPS when estimating results. Apple Watch does not require access to data or Wi-Fi in order to use GPS for this purpose. The route map is accessed via the Activity app on the paired iPhone, once the devices have synced the saved workout data.

Apple Watch requires access to data (via its Bluetooth connection with the paired iPhone) in order to use Maps.
