Emojis disappeared from my message keyboard.

That is odd for your emojis to disappear like that. Definitely sounds software related. I would highly recommend you updating your device to the latest software by following this article Update the iOS software on your iPhone, iPad, or iPod touch - Apple Support

If your device is already at the latest software you will need to reinstall the latest update using iTunes. You can do that by following this article If you can't update or restore your iPhone, iPad, or iPod touch - Apple Support

This should fix your problem. Let me know if it doesn't though.

Before going so far as to restoring your iPhone, there are some simpler things to try. Have you done a forced restart? Press and hold the power and Home (iPhone 6s or earlier) or power and down volume (iPhone 7) until the apple appears, then allow the phone to continue booting. Test. If that doesn't work, try deleting the Emoji keyboard and adding it back. Settings>General>Keyboard>Keyboards. Then tap Edit in the upper right corner. Delete the Emoji keyboard. If you're using any third party keyboards, delete them, too. Restart your phone. Add the emoji keyboard back.

Have you tried restarting your phone? Maybe there is something that is just using all the resources while it's trying to pull up the emojis. To restart your phone, (iPhone 6 or older) press and hold both the Sleep/Wake button, and the Home button for ~10 seconds till you see the Apple Logo. Once you see the logo, release both buttons and allow the phone to continue to boot. (iPhone 7) press and hold Volume Down, and the Home button for ~10 seconds and then follow the instructions above. After your phone boots, try again and see if there is any changes.
