When will the RAW format of the Canon 6D Mark II be made available on Mac OS?

When Canon approaches Apple with the supporting code, and Apple has time to incorporate it into a future camera raw update. Only Canon and Apple product development know what this release time schedule will be, as this is a user-to-user site, of which Apple product teams do not read, or participate.

There is already support for the 6D, and if you periodically visit this living link, you will see when (and if) 6D Mk II support is added. There should also be a future Camera Raw update to include this camera, either in an operating system release, or a separate future Camera Raw update that may appear in the Updates tab of your Mac App Store application.
