Hello,
I am trying to change a preference setting for the Notes application. All online guides say to open the Notes > Preferences menu item, however, no such menu item exists for me.
Here's a screenshot showing where I believe the Preferences item should be.

I also can't edit preferences that reside in the Edit menu, for example Text Replacement, because the options are greyed out.

There isn’t one for that application on El Capitan. You need to find another method, possibly from System Preferences.

Are you flipping serial though
You need to either double click the note or click on the right hand side where the text resides.
Notes has no Preferences menu item
