I have tried all the things you listed already, but the moment i try to start a new conversation with her it automatically sends the first message as an SMS. I am also sure that she is still using iMessage and has a secure connection because the problem occurred when I accidentally set it to send an SMS and now I can't change it back to iMessage. As you can see in the image I've attached it automatically chooses the option to send it as an SMS before I even start typing.

It would be more helpful if you listed the things you have tried.
Have you confirmed with the contact that they still are still using iMessage and have an active data connection? Are they still receiving iMessages from other people? If they are no longer using iMessage, there is nothing you can do about it. If they are, try deleting the entire conversation you have with this person and their contact. Add back the contact.
Go into Settings on your phone, go to Messages and make sure the first option, "iMessage" is still ticked.
What did your friend say about whether they're receiving iMessages from other people?
