I deleted a text/message from daughter which deleted all my pics and conversations I've had with her. How can I retrieve all them back on a iPhone 6s Plus.

Restore the phone from a backup made when the content you're looking for was present.
Do I do that from iCloud which says last backup 3 months ago or Thru att?? And will it overwrite everything on my phone like photos recently taken??
You restore from your iCloud backup or from a backup made to iTunes on your computer. And yes, it will erase the phone and put it back to the state it was in when the backup was made.
