If I adjust the volume on a song in iTunes (in the 'get info' section), will the adjusted volume of the song be heard on my iPhone?
Some songs are still too low or too high on my iPhone, even though I have the Sound Check button turned on.

Adjusting volume in iTunes Get Info / Options will not affect the volume on your iPhone. I just tested that and after syncing, the volume on iPhone was the same.
In iPhone Settings / Music there is a Volume Limit option which only reduces the volume. But that would apply to all songs, not just individual ones.
