This is not a problem per se, it's just annoying. I will look down and I have a different watch face than normal. I do the press and hold thing, swipe to the one I normally wear and select it. All is well.
Just wondered why this was happening and how to stop it.

Swiping edge to edge across the watch face switches between different watch faces that have been added to the collection on your Apple Watch.
If you tend to only use one watch face, you may find it most convenient to remove any others from the collection on your watch, so that accidental swipes across the screen no longer select a different one.
Watch faces can be added back as and when desired, either directly on your watch or via the Watch app on your iPhone:

With watchOS 3 a simple swipe to the left or right lets you change your watch face. Hence if you're wearing long sleeves or anything that can get in touch with the screen it could explain it.
