How do we copy JUST the email address?

if mail is inbox , take cursor on top menu bar > message > add sender to contacts .

Opened address book and selected one of contacts from it example SK .

Clicked on edit and named it as country 1 and finally clicked on done to save it .

I opened mail application again , the mail address SK with complete mail address was changed to country 1 .

Selected it and copied it ( command + C )

Then opened text edit via spotlight and pasted it ( command + V ) , the result was shown .

In address book if we click on edit and select an email address and clicked on drop down arrow the only option I could found was clicked on custom .

Add custom label ( write something in the field and click on ok ) , completely hiding of email address seems , right now is impractical .

Not sure how you are copying the "From" address but if I right/cntrl click on From in the body of the email I get a drop down menu, choose "Copy Address" and only the address is copied to the clipboard.

Interesting. Works either way for me.

I'm not sure I understand what you are seeing, but try going to Mail/Preferences/Viewing and uncheck Use Smart Addresses.
