Will Apple accept Trade-Ins for the Apple Watch in exchange for a Gift Card, or will they just recycle the device?
Apple Watch Series 1 38mm (2nd Gen), watchOS 3.2
If you are in the US - BestBuy now does trade-in's for BestBuy store cards (that can be used towards a new watch). I just spec'd out a trade in value for my wife's original 38mm watch - basic, not stainless or anything - $91.
My Series 2 goes for $160 for the trade in.

Apple does not currently offer either a trade-in program or an upgrade program for Apple Watch.
You may wish to consider selling your Apple Watch privately and putting the proceeds towards your new purchase. If doing so, be sure to follow Apple's instructions for unpairing your Apple Watch and turning off Activation Lock, such that it is left ready for a new user to set up as their own:
