I'm using an apple desk top and want to condense several documents into one file. How would you do that?

Depends on the type of documents and what you want to be able to do with them.
Generally a PDF is the best route.
Save them as PDF and then combine them into a single PDF. The only trouble with PDFs is that they cannot be edited easily afterward.

If they are all the same document type you could also just copy & paste to combine.
