With the App Store section gone from iTunes, how can I unhide hidden apps? I have a lot of hidden apps to make the Purchased list smaller. But some of them were paid ones.

Yes, until something changes, there is not a way to unhide hidden apps. See this:

Your approach of reverting to an older iTunes version seems to be the right way to do it for now.
There's not, I'm using iOS 11 since beta 4, there's no way to unhide apps.
For now I reverted to an older iTunes version and that worked, but it's not a permanent solution.

Yes you are right, I just found this out too!
Maybe there is something in the IOS11 App Store that gives us this ability?
