So my question is if i switch after getting the watch will it change automatically or do i have to get a new watch/watch sim
Unfortunately I am getting a different answer from the carriers. I have been attempting for days to move an apple watch series 3 from T-Mobile to Verizon and am having a terrible time doing so. The short: the watch fails to connect to my Verizon plan. Verizon claims that it is not possible to move from one provider to another. T-Mobile claims that not only can you not move from a one provider to another, you cannot move the phone from one T-Mobile account to another. Apple says it should be possible and is the carriers cannot accomplish it, it is their issue.

Apple Watch Series 3 (GPS + Cellular) does not lock to any specific carrier and has an embedded SIM / eSIM, which cannot be removed. The eSIM instead copies information from the SIM card in the paired iPhone.
When changing to a new carrier on a service plan that specifically includes support for Apple Watch, the watch can continue to be used on that new plan with that new carrier:

Follow the instructions here to switch your Apple Watch over in due course. In order to retain historic Health and Activity data, be sure to follow all of the steps, including restoring your new iPhone from an encrypted backup of your old one:
