I've figured it out for me. In the settings of the Sony head unit there is a section called 'Dimmer settings' and I had it set to on instead of 'Auto'. Setting it to 'Auto' or 'Off' will bring back day mode in maps but it comes at the consequence of not being able to adjust the display brightness for daytime use (which is ok in my car).

With some digging, I think I may have found the culprit. My VW Golf has automatic headlights which are always on. I think this is triggering night mode. I wish the unit would default to the head unit as it has an ambient light sensor which causes it to dim the display. It would be slicker if that's how it integrated.
Same problem for me. With an iPhone 5s and after upgrading to iOS 11.01, maps in carplay always will be in night mode when the beamlight is in automode. Only when the cars beemlight is switched off the maps will change to daylight mode. I have a new Passat AWD 2018 and the maps where correct before upgrading my iPhone to IOS 11.01

Unlike other answers in this thread I also have the XAV-AX100 and in iOS11 the map is always on night mode whereas in iOS 10 nightmode only triggered when I turned my headlights on. I've got a very basic car which doesn't have automatic headlights. It looks like there's a bug in iOS11 that is causing it to get the wrong information from the Sony XAV-AX100 unit.
I have the same issue with the same head-unit, but an a 2008 Ford F150. It also has automatic headlights, which I keep turned off. For me, this started when I updated my phone to IOS-11
I have the same phone connected to an Alpine iLX-107 in a 2016 with no issue.
So far I haven't found an answer.
I agree. For my VW Golf, it no longer matters if auto headlights are on, daytime running lights, or if they are off. It’s always in night mode on the Sony.
